1. Baked Kale Chips from Allrecipes
170g -200g of kale
1 tsp seasoned salt
1 tbsp olive oil
Preheat an oven to 350 degrees. Line a baking tray with baking paper. Remove the kale leaves from the stems using a pair of kitchen scissors or a knife. Wash and dry the kale leaves using a salad spinner. Drizzle olive oil and sprinkle the salt over the kale. Bake the kale for about 10 to 15 minutes until the edges are brown but not burnt.
2. Blogilates’ 100% Natural Banana Pancakes
1 ripe banana
Blend the two ingredients in a bowl, making sure that the banana is all mashed. Coat a pan with some coconut oil and set the heat on low to medium. Scoop some of the batter onto the pan and cook the pancake for 20 to 30 seconds before flipping. The pancake is ready to be served.

3. Shitake Mushroom Salad from Hungry Go Where
Makes 4 servings
3 cups fresh shitake mushrooms
1 medium onion
2 red chillies
1 small bunch fresh coriander
1 head baby romaine lettuce
1 tbsp fish sauce
1 tsp sugar
Wipe the mushrooms with a clean cloth before cutting them into quarters using a knife. Wash and chop the coriander. Roughly shred the baby romaine lettuce into large pieces. In a large bowl, combine the mushrooms, onion, chilli, lettuce and coriander.
To make the dressing, mix the lemon juice and fish sauce in a small bowl. If you wish, you may add a little sugar to balance the tartness. Drizzle the dressing over the salad. Set aside for a short while to allow the flavors to meld before serving.
